Celebrate with us as we unveil our exceptionally special Recently Disgorged 1995 Sparkling Wine Extra Brut. After 29 years of aging, we're disgorging 38 bottles of this amazingly preserved 1995 and will now pop the cork and share them with you exclusively! Join us for an elegant evening, combining fantastic wine, paired with delectable bites curated in partnership with Sabatino Truffles.

1995 Recently Disgorged Sparkling Wine Extra Brut
2020 Noblesse Oblige Sparkling Rosé Extra Brut

1995 Wölffer Cuvée Sparkling Wine Brut
88% Chardonnay, 12% Pinot Noir
After a perfect warm and sunny growing season, we picked the grapes by hand on September 4th (Pinot Noir) and September 25th (Chardonnay). Pressing of the grapes was done as gentle as possible. A slow fermentation was achieved by keeping cool temperatures in the stainless steel tanks. Malolactic fermentation was strictly avoided and the wine was aged for 5 months prior to clarification and filtration. The wine was bottled in February 1996 and went through its second fermentation. (Methode Champenoise). After 5 years it was hand riddled and disgorged with a dosage of 10grams per Liter (brut), ending up in a final No. of 290 cases. We kept 39 bottles and left them on Tirage (on the lees) till September 2024 when we finally disgorged them resulting in just 32 impeccable bottles of a uniquely aged sparkling wine. These collectors items were individually Chromed thanks to our friends from Badilla Painting.
